Summer Fun Kabobs

Makes 4 servings; Prep time: 30 minutes; Marinating time: 2 hours; Grilling time: 30 minutes


2 - Skinless boneless chicken breast halves cut into 1 inch cubes or 1/2 lb lean beef cut into 1 inch cubes or 1/2 cup Firm Tofu for vegetarian lovers (we used Tofu in our recipe)

2 medium potatoes - boiled to slightly tender thru; about 6-7 minutes in microwave

1 Bell pepper cut into chunks

8 Button mushrooms or mini portabello mushrooms

8-10 Cherry tomatoes

1/2 Onion cut into chunks

2 cups Yoghurt

4 Tablespoons Mumbai Chaat Gourmet Peanut Condiment (you can use Royal Moghul, Mardi Gras or Mexicano for this recipe as well)

Salt to taste


To prepare the marinade,

Combine yoghurt, peanut condiment and salt. Whisk until combined.

Set aside 1/2 Cup of marinade for basting during grilling.

Set the vegetables, tofu (or meat) in a bowl. Pour marinade on top. Mix to coat. Cover and set in fridge for about 2 hours.

Preheat grill on high. Thread the tofu (or meat) and vegetables onto skewers. Cook the skewers on the preheated grill, turning them occasionally to cook well on all sides. Brush the reserved marinade generously and cook until browned on all sides. Make sure meat is cooked thru and thru.
