"Royal" Eggplant Dip
Makes 2 cups; Prep time: 10 minutes; Cooking time: 35 minutes
1 Medium Eggplant
1 Tablespoon Olive oil or vegetable oil
1/4 Onion - chopped
2 Tablespoons Royal Moghul Gourmet Peanut Condiment (you can also use Mardi Gras or Mumbai Chaat for this recipe)
2 sprigs Fresh Coriander leaves - chopped
Salt to taste
Preheat oven to 425 deg F. Rough chop the eggplant into cubes about 1-2 inch in size. Combine the chopped onions. Toss and coat the veggies with the olive oil. Add some salt.
Roast in oven for 25 minutes. Let cool.
In a blender, combine the vegetables and Royal Moghul Gourmet Peanut Condiment. Blend until smooth. Add salt to taste as needed. Your delicious healthy dip is now ready.
Garnish with fresh chopped coriander leaves and serve with your favorite chips or vegetables. Or use as a spread on your pita or bread. Yum!
