Makes 4 - 6 servings; Prep time: 10 minutes; Cooking time: 10 minutes
1 Medium onion - chopped fine
1 Tablespoon Olive oil or vegetable oil
1 Large Tomato - chopped
4Tablespoons Royal Moghul Gourmet Peanut Condiment (you can also use Mardi Gras or Mumbai Chaat for this recipe)
2 Cups Half and Half or heavy cream (substitute with Almond/Cashew milk if vegan)
1 tsp Turmeric powder
Salt to taste
Heat oil in a saucepan. Add chopped onions and saute until golden brown.
Mix in turmeric powder and coat evenly.
Add chopped tomatoes and cook until all the moisture is absorbed.
Combine Royal Moghul Gourmet Peanut Condiment and stir.
Pour the Half and Half and mix until well blended. Bring to a boil while stirring occasionally.
The curry is ready to use with your favorite veggies/meat.
