One Pot Biryani with Tikka Masala Sauce

Makes: 4 - 6 servings; Prep time: 10 minutes; Cooking time: 25 minutes

Ingredients:

- 4 tbsp oil

- 1 cup Basmati Rice(washed)

- 1/2 onion - sliced

- 1 bell pepper - sliced

- 1 potato - thick cut - 1 carrot - thick cut

- 1 jar Tikka Masala

- 1 jar water

For garnish:

- 1/2 onion sliced thin and deeply caramelized

- Cashew halves - roasted 

Directions:

Step 1 : Heat oil in a heavy bottom pan. 

Step 2 : Sauté onions until golden. Add all the vegetable and sauté until lightly roasted.

Step 3 : Add the rice and mix gently.

Step 4 : Pour Tikka Masala & water.

Step 5 : Cover and cook for 15 mts on high and then lower the temp to cook until all water is absorbed and the rice is cooked.

Garnish with roasted cashews and caramelized onions and devour!
