Ingredients:
2 Tablespoons Nummy Nibbles Mung Bean based Egg Substitute
6 Tablespoons water
2 Tablespoons Olive Oil
Salt & Pepper to taste
Garnish
Chives or Green Onion, chopped
Directions:
Mix Egg Substitute powder and water together with a whisk, until smooth and no lumps. Season with salt and pepper, to taste.
Heat oil in a non-stick pan on medium heat. Once pan is hot, pour vegan egg mixture. Let cook undisturbed for 2-3 minutes. Once the sides start releasing, flip slowly and cook on the other side for 2 minutes or until cooked through.
Remove from heat. Garnish with topping and serve with toast.
