Mung Bean Plant Based Indian Style Bhurji

Simple Vegan Indian Style Egg Bhurji with our Mung Bean Based egg substitute. Perfect meal with toast, tortillas or indian chapatis.

Ingredients:
4 Tablespoons (equals 4 eggs) Nummy Nibbles Mung Bean based Egg Substitute
12 Tablespoons (3 fl. oz) water
3 Tablespoons Oil
1/4 onion, diced
1/4 tomato, diced
1/2 serrano pepper, diced
1/4 teaspoon turmeric powder
1/4 teaspoon cumin powder
1/4 teaspoon red chili powder, optional
Salt to taste
Garnish
2 sprigs cilantro, chopped
Directions:
Mix Egg Substitute powder and water together with a whisk, until smooth and no lumps.
Heat oil in a non-stick pan on medium heat. Once pan is hot,add the diced onion. Saute until onions are soft, then add the tomatoes and serrano peppers. Mix well and cook until onions are golden brown. Add the spices and mix well. Let the mixture cook for about 2 minutes.
Now pour the vegan egg mixture. Let cook undisturbed for 2-3 minutes until set. Scramble lightly. Keep cooking for couple of minutes, then scramble again. Continue until cooked through.
Take off heat and let sit for couple of minutes. Garnish with chopped cilantro and then serve. Perfect with toast, warm tortillas or indian chapatis.
