Malabar Black Bean Curry

Makes: 4 - 6 servings; Prep time: 10 minutes; Cooking time: 10 minutes

1 Tablespoon cooking oil of your choice

1 medium Bell Pepper [diced]

1/2 Onion [sliced] 

1/2 Tomato [chopped]

1 can Black Beans

*you can add your other fave veggies like carrots, potatoes, mushrooms if you like*

1 jar Nummy Nibbles Malabar Cooking Sauce

Fresh Curry leaves - for garnish


Heat oil in a skillet. Add veggies and cook until roasted, stirring occasionally. Add Black beans.

Add Malabar cooking sauce and simmer on heat for few minutes.Turn off heat. Garnish with cilantro.

Serve with Rice/Naan
