Frittata

Ingredients:

1 Tablespoon oil 

2 packs Omelette/Scramble mix - Any flavor

Salt to taste

2/3rd cup water

1 medium sized potato shredded

Directions:

Heat oil in a skillet. Add the shredded potato and cook until golden brown.

Preheat oven to 425 degrees F.

In a bowl whisk the contents of the pack with water until well mixed.

Add the potatoes and mix well.

Pour into a well oiled pan and bake for 30-40 minutes.

Use a toothpick to make sure that it is cooked through.

Remove from pan and enjoy!
