Curried Ratatouille

Sliced roasted vegetable ratatouille in baking dish

This is one of our favorite recipes that uses up all those veggies that are sometimes just stuck in your fridge! The prep for this recipe is simple - slicing all your veggies, that's it! It really does help if you can keep the slices relatively similar in terms of size. That helps with cooking everything evenly. Using any one the Nummy Nibbles sauces adds a depth of flavor to this dish. This is also a one dish recipe - so easy cleanup! The ratatouille plates beautifully and you'll have everyone asking for this recipe!

1 medium Eggplant [sliced]

2 Zucchini [sliced] 

2 ea. Onion, Tomato, Potato [sliced]

Any other veggies you love!

1 Jar Nummy Nibbles cooking sauce [any flavor]

Salt, to taste

Paprika, to sprinkle

Olive oil, to drizzle



Heat oven to 425 deg F.

Pour Nummy Nibbles cooking sauce into baking dish. Arrange the sliced veggies, keeping them layered. Drizzle olive oil and sprinkle Salt & paprika.

Bake covered for 45 minutes. Remove cover and bake for additional 20 minutes until veggies are cooked. Serve hot.
