Curried Burrito, Vegan burrito

Prep time: 5 minutes; Cooking time: 10 minutes

Ingredients:

1 Tablespoon Olive oil for saute'

1 medium Bell Pepper [Cut lengthwise]

1/2 Onion [sliced] 

Tofu crumbles [or any protein of your choice]

Pico De Gallo [chopped fresh tomatoes,onion & Serranos]

Cooked Rice + Lemon juice + Cilantro leaves + Salt to taste = Cilantro Lemon Rice

Tortillas 6-8

Nummy Nibbles Cooking Sauce (any flavor)

 

Directions:

Heat oil in a skillet. Add Bell pepper, Onions & Tofu and cook until roasted, stirring occasionally. Keep aside.

To assemble the Burrito -

Drizzle sauce over Tortilla. Add Cilantro Lemon Rice. Next up the saute'd veggies&Tofu. Add Pico De Gallo. Finally add more sauce and roll the burrito.

Expert Tip: 

These are great to make ahead and freeze. Just reheat the frozen Burrito in the microwave and you have a healthy meal ready in minutes.
