Cajun Spiced Skillet Potatoes

Makes 2 - 4 servings; Prep time: 10 minutes; Cooking time: 15 minutes


1-2 Tablespoons cooking oil of your choice

1 1/2 lbs new potatoes/fingerling potatoes - boiled and peeled

2 tsp cumin seeds

2 tsp whole peppercorns

3-4 Tablespoons Mardi Gras Gourmet Peanut Condiment.

1 stem Green onion chopped - for garnish

Salt to taste


Heat oil in a skillet. Add cumin seeds and peppercorns; fry until fragrant. 

Add the boiled and peeled potatoes and fry till browned on all sides stirring occasionally.

Stir in 3-4 Tbsp Mardi Gras to evenly coat the potatoes for 30 seconds.

Remove from heat. 

Garnish with chopped green onions.

These potatoes are an amazing quick appetizer or a wonderful side. Dig in before they are all gone!
