Breakfast Burritos


Vegan Breakfast burritos with potatoes, bell peppers and Nummy Nibbles plant based egg scramble

1 Tablespoon oil 

1 pack Omelet/Scramble mix - Any flavor

Salt to taste

1/2 cup water

Tortillas - 2

Potatoes - 1 medium diced

Bell Pepper - 1/2 sliced

Spinach - 10 stems and leaves

Vegan Cheese - 1/2 cup

Salsa - 2 tablespoons


Heat oil in a skillet. 

In a bowl whisk the contents of the pack with water until well mixed.

Make scramble according to this recipe

Roast potatoes, bell peppers, spinach until cooked.

Load up Tortilla with salsa, roasted veggies and scramble. Top with cheese and roll. 

These can be made ahead and frozen. Take them out and microwave/ use a panini press for a crispy exterior! Yumm!
