Alu Gobi [Potato-Cauliflower] Curry with Kolhapuri Cooking Sauce
Makes: 4 - 6 servings; Prep time: 10 minutes; Cooking time: 10 minutes

1 Tablespoon cooking oil of your choice
1 cup Potatoes [diced, partially cooked]
1 cup Cauliflower [florets]
*you can add your other fave veggies like peas, carrots, green beans, bell peppers if you like*
Fresh Cilantro leaves [chopped] - for garnish
Heat oil in a skillet. Add veggies and cook until roasted, stirring occasionally.
Add Kolhapuri cooking sauce and simmer on heat for few minutes.Turn off heat. Garnish with cilantro.
Serve with Naan bread, Rice or Quinoa.
